Katie’s Tortilla Soup

I am so sad.  Summer is ending and I’m being dragged into fall.  I love summer.  The heat, humidity, the sun shining down and warming me up.  Love love love love summer.  So sad to see it ending.  There are good things about fall too, don’t get me wrong, the crisp smell in the air, the pretty leaves, the campfires and roasting marshmallows.  Cinnamon and spice and the holidays are right around the corner.  So it’s not all bad.  Especially down here in Missouri, the weather stays warmer for longer. It’s still in the 80’s and 90’s this week, so it’s not like it’s super cold out or anything, it’s just not been sunny for a few days.  

I used to love the cooler weather, but now I’m cold all the time. I was in Target the other day and one girl gave me a really odd look.  It was 90 degrees outside and I was wearing jeans, a t-shirt and a sweatshirt, but that dumb air conditioning is so cold. Everyone complains about the heat, but you go inside a building and you might as well be in an igloo. Sooo yeah, I dress for the inside temperature, not the outside.  At least in the winter I don’t get weird looks for how I’m dressed.

Anyway with it being rainy and dreary today, I felt it would be an excellent day to make some of Katie’s Tortilla Soup.  Katie is one of my sorority sisters, and she is awesome.  She gave me this recipe. 

If you think the chips in the pictures look a little odd it is because they are not normal chips.  They are called Beanitos and they are chips made out of white beans and rice instead of corn.  I love them.  They have all different types of snacks, although I tried the puffs and I don’t recommend those. Ick.  But the chips are really good.

Katie’s Tortilla Soup

  • 3 – 15.5 oz cans of White Northern Beans
  • 1 – 16 oz jar of Salsa
  • 1 tsp Cumin
  • 1 packet of taco seasoning
  • 4 – 6 precooked boneless breasts, chopped into chunks
  • 4 cups of chicken broth, you can use less if you want it to be thicker

Throw everything in a large soup pot until it is hot.  Serve with tortilla chips, cheese and sour cream.
